What's the story on our coffee?
The truth is, we care a lot more about deliberate handcrafted foods and preparation techniques than in fluff and extras. We use only a pour over slow-filtered method of brewing, which relies totally on proper water temperatures, controlled grind, and most importantly- really stellar coffee beans. There's no hiding with this coffee and we think that's the best way to treat our food.
We work with the local coffee roasters Metropolis because we believe in their philosophy and practice, and we trust that the quality of the coffee is in large part due to their conscientious and ethical approach to the trade, respect for farmers, and willingness to spend time on the ground.
The majority of the coffee we brew will come from a single-origin, sensitive to seasonal changes and grown organically. In this way, we will have the opportunity to share with you the 'backstory' of our beans and their producers as well.

A little backstory about pour-over coffee:
Monmouth Coffee in London was the first slow-filtered coffee house, founded in the 70's. Philz Coffee in the San Francisco Mission District has produced a sort of 'cult following', and was actually the inspiration for our choice. Read a little something about Philz: "The Ultimate Cup o' Joe"
